                                      VEGE POLPETE

Ima dana kad stvarno ne znam što bi skuhala pa pretražujem net za inspiraciju...e baš to sam našla kad sam vidjela primamljivu sliku od Darka Kontina na Instragramu i nisam se razočarala već ugodno iznenadila :) Zasitne su te jako fine i zdrave!
Pa donosim Vam  recept iako sam ja neke izmjene napravila :P

Vege polpete sam radila od:


125g crvene leće (ja sam zelenu stavila)
50g luka
250g mrkve
100g tvrdog sira
cca 150g krušnih mrvica
listovi peršina (po želji količina)
2 -3 jaja
papar , sol, vegeta
2 žlice svježeg kravljeg sira (izvorno nije u receptu)



Stavite leću kuhati u 500ml vode. Kad proključa ostavite da vode ispari te će pritom od mješanja postati mekša i sličnija pireu. Kad je skuhana pustite da se ohladi. Isjeckajte luk na sitno ,mrkvu ogulite i naribajte te uz naribani sir stavite u dublju posudu .Dodajte isjeckani peršin, sol, biber,vegetu. Otprilike 1 žličicu vegete ,1,5 žlićicu soli  i 2 žlice krušnih mrvica sam stavila u smjesu. Potom stavite pire od leće i jaje. Sve promješajte tako da smjesa postane kompaktna. Ukoliko primjetite da je presuha možete staviti kao što sam i ja - malo svježeg vrhnja.


                                   


Potom formirajte smjesu u  kuglice željene veličine te ih panirati u jajima i krušnim mrvicama izmješanim sa sezamom. Pritom ih pritisnite kako bi dobile oblik pljeskavice. 
                                     


 Pržite ih u dubljem ulju te izvadite kad poprime zlatnosmeđu boju. Stavljajte ih na papirnate ubruse kako bi upili suvišnu masnoću. Ispalo mi je 10 večih komada od navedene smjese.

                         

Ovo jelo može biti prilog ili glavno jelo kao u mom slučaju.

                                   VEGGIE BURGERS




There are days when I really can't think of anything that I could cook so I search the web for inspiration...and I found it when I saw a tempting picture from Darko Kontin on Instagram and I wasn't disappointed but pleasantly surprised :)
It fills you up in instance and it's healthy!
So I present to you the recipe although I made some changes from the original :P


You'll need:


125g red lentils (I used the green one)
50g onion
250g carrots
100g hard cheese
approximately 150g fine bread crumbs
leafs of parsley
2-3 eggs
pepper, salt
2 tbsp of cottage cheese  ( originally not in the recipe )



Put the lentils to cook into 500ml of water. When it boils leave it to simmer,mix it until almost all water evaporates and it becomes almost the consistency of mash potatoes.When it's cooked leave it so that it cools down. Finely chop the onion , peel off the carrots and grate it with the hard cheese and put it into a deeper bowl so you can mic it. Add finely sliced parsley, salt, pepper. I used about a teaspoon of mixed salty herb spices, 1,5 tsp of salt and 2 tbsp of bread crumbs. The you put the egg and lentils. Mix it all together. If you notice that the mixture is too dry  you can do the same thing as I did - add a bit of cottage cheese.

Then form the mixture into little balls and crumb by rolling them into mixed eggs with a bit of salt and then roll them into a mixture from breadcrumbs and sesame seed. Press them between your palms or with a spoon so that they get a shape of burgers.

Deep fry them and scoop them out after they turn to golden brown color. Put them on paper hand towels so that they can absorb the excess oil. I've made 10 larger burgers out of  the mixture.

This dish can be served as a side dish or a main like in my case.

                                        TORTA OD SIRA

 Htjela sam probati napokon napraviti taj 'slavni' cheesecake iliti tortu od sira... naišla sam na recept na internetu preko bloga COOKam i guštam iako sam stavila manje maslaca jer sam ocjenila da ga je previše....



Potrebno:

Biskvit:
 200g keksa ( Speculas-imaju miris cimeta)
 80g maslaca
 2 žlice šećera

Krema:
 600g krem sira (ABC sam stavila )
 4 jaja
 4 žlice šećera,može i više prema želji ako želite da bude baš slatko
 sok i korica od 1 limuna
 1žlica ekstrakta vanilije

Preljev od vrhnja:
2 kisela vrhnja
1 vanilin šećer
1 žlica šećera (po potrebi)


Priprema:

Podlogu napravite tako da izmrvite kekse bilo u mikseru ili ručno kao što sam ja. Uzela sam deblju vrečicu za zamrzavanje, napunila je do pola sa keksima i udarala po radnoj ploči s njom.Brzo se drobe jer su suhi.
Nakon uspješnog drobljenja keksa do sitnog praha zagrijte maslac da se otopi i stavite šećer u njega te sve zajedno izlijte u samljevene kekse. Pritiščite smjesu sa poleđinom žlice i tako stopite suhe kekse sa onim koji su već natopljeni u maslacu.Dobit će te jednoličnu smjesu. Potom ju možete prebaciti u  kalup već obložen masnim papirom sa svih strana. Izravnajte sve do rubova kalupa. Imajte na umu da ako stavite masni papir na obruč kalupa da se krema neće oštetiti prilikom njegovog skidanja. Pecite na 200°C 5 min.

Krema ne može biti laganija za pripremu:) U dublju posudu stavite krem sir i šećer te izmiksajte da se kristali šećera razbiju, dodajte 4 cijela jaja jedno po jedno te ekstrakt vanilije i sok i koricu od jednog limuna. Kad sve izmiksate smjesa će bit dosta rijetka ali ne brinite jer će se ona dosta stegnuti zbog jaja. Izlijte na podlogu te stavite da se peče na 170°C oko 40 min. Krema će se možda odvojiti od rubova kalupa.

Nakon što se kolač ohladio prelijte ga sa preljevom od šećera i vrhnja te stavite u pečnicu da se stegne oko 15 min. na 200°C ...Provjeravajte ju za to vrijeme da ne dobije crne točkice ....vidjet će te da se površina ne ljulja i da se više ne sjaji jako ako je gotovo.
( Ne naslanjajte žlicu na površinu kao što sam ja pogreškogm jer će Vam se otkinuti dio preljeva :) )
Ukoliko želite možete napraviti preljev za kolač od svježeg ili smrznutog voća tako da mu dodate šećer te ga zagrijete pri čemu će se usitniti mješanjem. Ili ga jednostavno možete ukrasiti svježim voćem po izboru.

                                        CHEESECAKE





I wanted to finally make the 'famous' cheesecake...I came across a recipe although I put in less butter 'cause I thought it was too much....

You will need:

For the base:
200g  cookies (don't use soft ones)
80g  butter
2 tbsp sugar

For the filling:
600g cream cheese
4 eggs
4 tbsp sugar (or more if you decide that it's not sweet enough)
juice and peeled of skin of 1 lemon
1 tbsp vanilla extract

Cream topping:
2 creams (I used with 12% fat)
1 vanilla sugar
1 tbsp of sugar (if needed)


Preparation: 


Make the base by crumbling cookies in a blender or by hand like I did. I used a thicker bag for deep freeze, put cookies in it, sealed it and bashed it into my working board. Use cookies that are dry.After you successfully bash the cookies into a fine dusty texture warm up the butter, put the sugar in it so it can disolve quickly and then pour it into the cookies. Press the mixture with the back side of the spoon so that you can press the dry parts into the wet ones. You should get an even mixture. It should crumble. Then you put it into a mold that has been covered with oil-paper on every side of the mold. (It will be easier for you to get the cheesecake out of the mold and the filling won't stick to the sides :)) Press the mixture and even it out with a spoon.Bake for 5 min. at 200°C /390° F

The filling is easily done.In a deeper bowl put the cream cheese and sugar and mix it together, add 4 whole eggs one by one , vanilla extract and the juice and skin of a lemon. When you're finished mixing the texture of the mixture will be more like a fluid but that's just how it's suppose to be, it will harden 'cause of the eggs. Pour the mixture into the mold on the base and bake it at 170°C / 338°F for about 40min. The filling will probably detach from the corners of the mold.

After the cake has cooled pour it with the cream topping and put it in the oven until it hardens for about 15min at  200°C / 390°F. Check on it in the meanwhile so that it doesn't get black spots...You'll see that the surface of the cake doesn't wobble and that it doesn't shine as much when it's done.

( Don't press a spoon on the surface like I did 'cause it will pull a part of the topping off :) )
If you prefer you can make a sauce for the cake from fresh or frozen fruits by adding a bit sugar to it and heating it up in a pan so that way it can be chopped into smaller peaces by stirring it. Or you can just decorate it with some fresh fruit of your choice.

                      DOMAĆE  NJOKE  SA  PILETINOM

Kako sam i bila napisala u prvom postu , ovaj će biti vezan za recept u kojem se može koristiti kokosovo mlijeko. Uz to sam i prvi put radila svoje njoke...i ispale su savršeno...mislim da ću u buduće kupovati one tvrde njoke u dućanu samo ako nemam ni vremena ni volje za napravit svoje... 



Potrebno za njoke: 

1/2 kg krumpira
250 g brašna
1 jaje
1 žlica maslaca
sol


Potrebno za umak:

1 pileća prsa
1 manji crveni luk
1/2  svježe paprike
1 mala mrkva
1dcl = 100ml vrhnja za kuhanje 
1dcl = 100ml  kokosovog mlijeka
sol, biber, kurkuma, curry, začin chilli con carne
malo vode i maslinovog ulja
               

       Prvo narežite meso na manje komadiće, posolite ga, dodajte biber , malo maslinovog ulja i narezanog luka te ostavite da malo omekša u posudi nakon čega stavite sve zajedno u prethodno ugrijanu tavu na kojoj prethodno dodajte još malo maslinovog ulja,popržite mrkvu pa dodajte kurkume, curryja i chilli con carne-a
.Povremeno miješajući nakon što luk omekša stavite  narezanu papriku i zalijte s malo vode da se pirja. Ukoliko voda ispari dodajte još vode. Nakon što je meso gotovo zalijte ga sa vrhnjem za kuhanje i kokosovim mlijekom. Kokosovo mlijeko mu neće dati slatkasti okus, prije će mrkva to učiniti. Umak će se ubrzo zgusnuti što je znak da je gotov.



                                       



      Njoke sam napravila tako što sam očistila, narezala na kockice i skuhala u slanoj vodi krumpir. Kad se skuhao izgnječila sam ga dodavši mu 1 žlicu otopljenog maslaca. Nakon što se malo ohladio dodala sam mu i jaje te sve zajedno umjesila u brašno.Navedena količina brašna je dovoljna za smjesu i za posipanje prilikom oblikovanja a meni je čak i ostalo malo od nje.Tijesto treba biti mekše jer će i njoke onda biti mekše.Nakon što se umjesili tijesto odvajajte male dijelove,pobrašnite ih i sa rukama na radnoj površini oblikujte 'zmijice'. Odrežite ih prema svojoj volji kolike želite da budu. Ja sam svoje napravila debljine prsta. Možete ih rezati nožem, tanjurom sa tankim rubom, kotačićem.




                                       

                                             



   Možete i utisnuti vilicu na njih kako bi bile malo dekorativnije.

                                     


Kad provrije voda u kojoj će te ih kuhati jednostavno ih stavite unutra i čekate da isplivaju na površinu. Po mogućnosti stavite ih u turama da se ne zalijepe jedni za druge.Možete još malo i sačekati nakon toga ali u pravilu su tad gotove i mogu se vaditi.


Ukoliko ne iskoristite sve njoke  pobrašnite ih ,zamrznite na pladnju/tanjuru i potom stavite u vrečicu i u zamrzivač kako se ne bi spojile.

Nakon što su  njoke i  umak  gotovi pomiješala sam ih zajedno kako bi se sjedinili. Poslužila sam jelo uz krastavce s lukom i malo octa i soli.

HOMEMADE  GNOCCHI  WITH  CHICKEN


As I wrote in my first post, this one is going to be about a recipe in which you can use coconut milk. I also made my own gnocchi..and they turned out perfect...I think in the future I'll buy those hard ones from the store only if I don't have the time or will to make my own.... 


For gnocchi you'll need:

1/2 kg of potatoes
250g of flour
1 egg
1 scoop of butter
salt


For the sauce you'll need:

1 chicken breast
1 smaller onion
1/2 bell pepper
1 smaller carrot
100ml cream
100ml coconut milk
salt, pepper, turmeric, curry, chilli spice
water and olive oil



To make the chicken with sauce slice up the chicken breast into smaller pieces ,add salt and pepper on it, a bit of olive oil and some chopped onion in a bowl so that it softens.After some time you put it all together in a preheated pan on which you previously added a bit of olive oil and chopped carrot , turmeric, curry,chilli. Occasionally stir and after the onion has softened add chopped bell pepper and some water so that it covers only the bottom of the whole pan. If the water evaporates add it again.After the meat has been cooked add cream and coconut milk.It should get more thick.And the sauce is done now. ( 1st picture )


To make the gnocchi peel the potatoes, slice the into cubes and cook the in salty water.After they're cooked add some salt and 1 scoop of previously melted butter.Smash it all together and after it's cooled down a bit, add one egg and combine it all with flour.You'll see that the amount of flour is enough for gnocchi and for flouring the working surface 'cause it's sticky.Dough should be soft and sticky...but don't add too much flour or else they won't be so soft.
Take a piece of the dough and roll it with your fingers to a shape like a snake, I made them as thick as my index finger ( 3rd picture )...then chop the gnocchi's to a size you prefer...you can do it with a knife, the sharper edge of a plate etc. 
You can even press the fork on it to make it more decorative ( 4th picture ). 
Boil water and add the gnocchi in tours so they don't stick to each other.After they emerge they're done.
If you don't use all of the gnocchi you can freeze it on a plate separately so they don't stick to each other and then put them all together in a freezer in one bag.You can now get them out and mix into the chicken sauce.I served it with a salad from chopped cucumber with some onions and vinegar and a pinch of salt.( last picture).

                              KOKOSOVO  MLIJEKO
                              IZ  KUĆNE  RADINOSTI

Vjerojatno ste puno puta već čitali u medijima kako je kokosovo mlijeko uz bademovo ,lješnjakovo ,sojino,  konopljino jako zdravo. Korisno je pogotovo za ljude koji ne podnose laktozu iz kravljeg mlijeka.

1 šalica kokosovog mlijeka ima 552 kcal , 57,1g masnoće od toga je čak 50,7g zasićenih (onih dobrih) ,kolesterola nema ,natrija je 36 mg, ugljikohidrata 13,2g od čega je 8g šećera a 5,3g dijetalnih vlakana,proteina ima 5,5g ,kalcija 38,4 mg a kalija 631 mg

No problem je što je ono trostruko skuplje od kravljeg.Zato sam odlučila napokon vidjeti u čemu je cijela strka oko njega a i ovako mogu biti sigurna da u njemu nije nešto nepoželjno poput hormona i sl.


Potrebno je:

3/4 šalica kokosovog brašna
2 i 1/4 šalice prokuhane vode
ekstrakt vanilije, stevija , med po želji
gaza



Postupak:

1.Imate dvije opcije: da kupite 1 kokos....vidjet će te da ima tri kruga na sebi, pazite da nisu puno tamniji od ostatka kokosa. Jedan od njih bi trebao biti mekši. Kroz njega će te probušiti rupu uz pomoć bilo čega što može napravit dovoljnu rupu.Iz njega onda pustite da voda izađe (ona se također pije no prije provjerite da li je u potpunosti bijel unutra).Potom trebate  prepoloviti kokos te sa nožićem odvojiti koru od unutarnjeg bijelog dijela. Stavite u blender da se usitni.

da kupite u dućanu kokosovo brašno koje je jeftino uvijek što sam i ja učinila.

2.  Stavite pola litre vode da provrije nakon čega sa vrelom (neka malo odstoji) vodom prelijete kokos i pustite da odstoji 2 sata.

3.  Premjestite smjesu u blender (možete dodati med/steviju po želji ili vanilin ekstrakt ili sjemenke prave mahune vanilije,ja sam dodala 1 žličicu meda i 6 kapi stevije i kap vanilin ekstrakta) miksajte na najjačem oko 2 min. Ukoliko nemate blender i štapni mikser će poslužiti.Vidjet će te da se tekućina zapjenila i da je skroz bijela .

4.  Pripremite gazu nad posudom na koju će te preliti tekućinu. U gazi treba ostati samo kokosovo brašno.procijedite da što više možete uz zavrtanje tkanine iznad kokosovog brašna.

                       

5.  Premjestite u posudu u kojo će te ga čuvati i zatvorite.Meni je ispalo pola litre.Možete ga čuvati oko 4 dana.Tijekom hlađenja vidjet ćete da se na površini stvara tvrdi sloj,to je masnoća koju možete odvojiti i posebno čuvati ili čak zamrznuti te koristiti za kolače i sl.Ukoliko ju nećete koristiti za to dovoljno je da ju promučkate i izlijete sa mlijekom jer će se otopiti pri sobnoj temperaturi od 23° C na dalje.


Koristila sam baš jučer kokosovo mlijeko u jednom fiiiiinom receptu za ručak. No o njemu u drugom postu:)

English version:             COCONUT MILK DIY


You have probably read a lot of times in the media that coconut milk with almond , hazelnut, soy, hemp is really healthy. It's useful particularly for people that have intolerance for lactose in cows milk.  

1 cup of coconut milk contains 552 kcal, 57,1g of fat from which 50,7 g saturated (the good kind), there is no cholesterol , 36 mg sodium, 13,2 g carbohydrates from which 8 g of sugar and 5,3 g dietary fiber, 5,5g of protein , 38,4 mg of calcium and  631 mg of potassium.

But the problem is that it's triple the time more expensive than cows milk. That's why I decided to finally see what the big fuss is about it and this way I'm sure that there aren't any unwanted things in it such as hormones etc.

You will need: 

about 1 cup and 1/5 of a cup of coconut flower (chopped coconut)
about 2 cups & 1/8 cup of boiled water
vanilla extract, stevia ,honey if and how much you want it
gauze


The procedure: 


1.  You have two options, you can buy a coconut and drill a hole in one of the softest of three dots that it has (try to pick the one which color of dots doesn't vary much of the rest of the coconuts shell) and let the juice come out of it (don't drink it until you're sure that the inside of the coconut is white). Then slice the coconut open and scrape off the white parts.

or you can

 buy in the store already chopped coconut - also known as coconut flower

2.  Boil water and cover the coconut with it.Let it sit and soak for about 2 hours.

3. .After it's done soaking mix in honey,vanilla or artificial sweetener such as stevia. Blend it and you'll see that the liquid is foamy and white.

4. .After blending it put a clean gauze on top of a bowl/jar and pour it over it. It should leave only coconut flower on the gauze.Then  squeeze the gauze as hard as you can.

5. And there you have it....your handmade coconut milk. :D
Pour it in a container where you will keep it refrigerated for max 4 days. While cooling down you will notice that there is a thick layer of white forming on top.It's just fat and if you don't want to separate it, freeze it and use it for cakes etc. you can just break it and pour it with the rest of the milk and it will disappear on room temperature from 23° C or more.

I used coconut milk in a recipe for lunch yesterday . But about that in the next post.
